Occurred to me that it could be handy to be able to select a file *not* to be included in the backup (i.e. to mark a directory so that everything in it apart from marked files would be backed up).
Folders of photos often have a Thumbs.db file; someone might want to say that all the photos currently in the folder (and any photos subsequently added) should be backed up, but not the Thumbs.db file.

It's difficult to explain...
It's difficult to explain (or to make so obvious as to not need explaining) but I think that should already be possible.
If you select individual files inside a folder then just those files (and no new ones) will get included in the backup.
If you select the folder first, and then de-select individual files inside the folder then new files should be included in the backup and the de-selected files should be excluded.
